I will be honest, when it comes to healthy eating, I’ve been kinda lax for like a year or more. I was so consumed with building my biz and getting my finances in order that I kinda put wellness on the back burner. Don’t ask me why I ever thought that was a good idea?! lol. Trust me I paid for it. My little unhealthy habits resulted in me picking up some weight (which I can live with) and caused me to feel forever tired. I got tired of always being exhausted, so one of my #realife #lifegoals this spring was to level up in the area of health and wellness.
And I did! I’m back to healthy eating/living and will be sharing all about it so you can do the same.
To start, here’s 3 quick and delicious healthy breakfasts that will give you a morning boost, increase energy throughout the day and leave you feeling super fabulous. And dig this?! All of these dishes only take 5 -7 minutes to make.
Healthy Breakfast #1: Eggs & Avocado Toast
2 slices toasted Ezekiel bread
1 teaspoon coconut oil
2 dashes sea salt and garlic powder
Spread the coconut oil on each slice of toast, sprinkle toast with sea salt, and garlic powder. Cut avocado in half and remove seed. Spoon avocado from skin and spread/mash on each slice of toast. Add scrambled eggs to one side of bread. Add other slice of bread on top to close sandwich. Enjoy.
Okay, before I go further, let me just say ALL things are made better with coconut oil.
Coconut oil will leave your skin glowing, your stomach flatter ( the lauric acid in coconut oil reduces belly fat) and give you a boost in energy.

Healthy BREAKFAST #2: Apple Blueberry Smoothie
1 chopped red apple
1 cup blueberries or mixed berries
2 handfuls fresh baby spinach (or other leafy green)
½ cup water or almond milk
If you want to make this smoothie more filling and sustaining, you can always add in a good quality protein. Here are a few of my faves:

HEalthy BREAKFAST #3: Scrambled Eggs w/Greens (No Ham :))
1 tablespoon coconut oil
4-5 kale leaves shredded or cut into ribbons
dash of garlic powder
Sea salt and pepper
Heat coconut oil in a pan until melted, add kale and sauté until bright green and a bit wilted. Crack eggs into the kale and mix to scramble the eggs. Season with garlic,salt and pepper.
